Samichlaus 2006
This is a follow-on from my post last year (check out last year's post for all the delicious details) about the 2006 Samichalus that Meg and I were gifted for our wedding. This was the final one left in our wedding gift 4-pack.
Much like in the financial markets, 2009 was hard on the 2006 batch of Samichlaus. A lot of the "complexities" from last year mellowed out even futher making the beer taste like a root beer tootsie pop with a little alcohol sting on the back end. I wish there was more to describe, but that was pretty much it, a sugary brown alcohol laced perma-flavor across the palate. Great if you forgot what tootsie pops taste like, but not so great if you were expecting beer nirvana.
Oh well, the 2008 and 2009 tastings were pretty nice, so 2 out of 3 ain't bad.

In the Land of Beer
I labeled the Maibock this evening, now dubbed the MarzBock (translation: March Bock). Most people wonder how I make the labels and get them on the bottles. Pretty simple, I design them on Excel and then glue stick them on the bottles. Hard to screw up.
I also bought some stick on letters this weekend and emblazoned my growlers with "HolzBrew."

PS- I got confirmation today that the beers I entered into the National Homebrew Contest arrived safely in Zanesville, OH. Judging starts next week, fingers are crossed.

Quick Update
I don't really have time to formulate a witty and intriging post, but I thought I'd let everyone know what's up in the HolzBrew homebrew world. I brewed a Imperial Belgian Wit (the OG was 1.066, does this really qualify as Imperial? I say yes), this weekend that I am pretty jazzed about. The plan is once it gets through primary fermentation to add some french oak cubes that have been soaking in Gran Marnier, and most likely I'll add some additional Gran Marnier as well. I'm looking to accentuate the orange flavor in a Belgian Wit.
I also bottled the maibock I brewed back in December. Its really turned out well and I'm pretty sure I am going to enter it into the upcoming national homebrew competition . I am considering entering my holiday ale (tripel) as well as the Old Woodie Ale (specialty wood aged beer). This would be the first competition I've ever entered my beers in and certainly some of the steepest competition. Regardless of winning any awards I think it would be cool to get back some constructive criticism.

Sea Rocket Bistro
Why is it that San Diego, a "seaside" town, seems to noticeably lack affordable, fresh seafood? The majority of restaurants in the greater San Diego area with an emphasis on serving our fish friends are either overpriced, sushi (while delicious, a cooked meal is often necessary), or el cheapo a la Rubio's. I had high hopes for Sea Rocket Bistro, a local, organic restaurant in its infancy with seemingly endless recommendations and ads in local weeklies. As a general supporter of food-with-morals, a perfect opportunity to finally put the Bistro to the test came with Ashton's 23rd birthday. Just a hop, skip, and jump down the bustling 30th Street area, the parking situation isn't ideal, but at 6:30 on a Tuesday we managed to find something in the same zip code, despite the proximity to about 5 other restaurants and a corner bar.
My first impression was impressed- the decor is spot on. Whoever decorated the space has a fantastic eye for color, simplicity, warmth, and friendliness. The soft green walls were accentuated perfectly with the school of swimming cardboard fish that cover the industrial ceiling, and twinkling lights splashed along the walls seemed to be a cheap and adorable way to draw you in. It seemed to be split into two different areas plus a bar with a chalkboard announcing the specials of the day, which is great if you were sitting at the bar but completely unreadable if you were anywhere else. Subtle touches included the warm wood furniture and beautifully framed photographs along the walls.
However, while decor is great and creates a warm atmosphere in which to set your expectations high, I don't eat photographs. It's going to come down to the food, which isn't 100% of the experience, but the most important and basic of dining out. The menu was just long enough to be impressive but without losing focus. I really enjoyed their $2 Tapas inclusions, a quirky idea to allow tidbits to be tasted without breaking the bank. Our waitress had a bit of trouble remembering all of the specials of the evening, but luckily there seemed to be a veteran Bistro'er to offer support and recommendations. We finally made our final selections of:
One dozen oysters
Sauteed sardines
Winchester Gouda Cheese & Honey on bread
San Diego Fisherman’s Stew (recommended and received spicy!)- squid, Carlsbad Aqua Farm clams & mussels, and market fish chunks simmered together in a tomato-based stew
Yellowtail special (sauteed with fresh local organic greens and sweet potatoes)
Carrot cake cupcake
Chilled Bread Pudding (with seasonal fruits, served with whipped cream and fruit garnish)
Let me start with the oysters. We had made a point to go on a Tuesday purely for the 1/2 off oysters. I've harbored some hesitation with our slimy friends, and have some good oysters along with bad ones. Let me tell you, one bad oyster cancels out the memory of 100 good ones. However, luck was with us, and these were a fantastic way to start the meal. I find that West Coast oysters are a little meatier and saltier than their East Coast relatives, but with a dab of their unique cocktail sauce and a squeeze of lemon these were top notch.
We'd been recommended the sardines from a fellow foodie friend, and they were a big disappointment. I'm not completely sure what I expected from the generally salty, prickly, and oily fishes, but they were exactly that. Would not order again anywhere.
The cheese and honey bread was superb. Two slices of fresh bread lined with a hard cheese and a dabble of honey- simple, sweet, light, and delicious. Could have eaten a loaf of the bread with a block of cheese and gallon of honey, but thank goodness it was tapas! A delight.
Ashton's stew was actually better than I had expected. Generally, I find that seafood stews are the leftovers ready to get tossed and the flavor completely depends on the broth. This tomato-based stew was recommended spicy, and came sort of spicy; as a hot sauce collector, lover, and enthusiast, I POSSIBLY have warped ideas about heat, but this was okay. Not the best, not the worst. It tasted fresh enough, and had a nice variety of what seemed to be generally fresh fish and assorted underwater creatures, but at the end of the day it was fish soup. Not bad.
My yellowtail was perfectly acceptable. I found it somewhat bland, lacking seasoning and when you depend on the fish to make up the majority of the flavor you really need to have some wizard hands to use subtle spices and preparation to enhance it to its full potential. This had a long way to go to reach its full potential, and the soggy greens and squishy sweet potatoes didn't add much. The sweet potatoes were an odd combination. Serious meh.
However, faith was restored with my dessert selection. The cupcake was a little slice of moist heaven. I perhaps speak too soon with a blanket statement of new-found appreciation. Ashton's bread pudding was more like sweet mush. If what they served was bread pudding, then slap my face and call me Sally. Let's just say Ashton didn't leave on such a high note as me.
When I had asked a friend with a similar love of dining what she thought about Sea Rocket, she thought for a moment and said "Some restaurants get too much credit for being local, organic, eco-friendly, etc. If it comes down to the food, Sea Rocket Bistro doesn't measure up." I wasn't quite sure what she meant, but after having experienced it for myself I can see what she meant. It has absolutely everything going for it, the process, the ingredients, the people, the vision, the location, the creativity, the niche, the atmosphere, etc. Unfortunately, if I had had a blindfold on I wouldn't have given it a second thought. I don't want to deter people completely from going there- not only are they extremely active in the community, avid supporters of sustainable food culture, and offer great incentives like 10% biking discounts and the like, it's not a BAD place, it's simply not amazing. There were highs, and there were lows, but all in all I enjoyed myself, the experience, and left a bit wiser about food vs. food culture.

Brewer's Corner - March 2010
We’re almost there. After successful wort boiling, the assimilation of various aspects of hop character and hot break removal we are ready for the final steps before primary fermentation. The wort in the whirlpool is still very hot. It is much too hot to pump to the fermenter for fear of killing our all important yeast. In order to protect our precious wort from contamination it is vital for a rapid chilling en route to the fermenter to secure vigorous yeast fermentation as quickly as possible. This is critical to the microbial stability of the beer. Enter the heat exchanger.
In line between the whirlpool and the fermentation vessel we have a heat exchanger in place. It works much like the radiator in your car but instead of using air as a cooling media we use chilled water. The heat exchanger consists of a series of heat exchange plates. These plates separate the wort path from the chilled water path. Hot wort enters on one side of the plate as the chilled water courses through the other. An exchange of heat occurs between the hot wort and the 5 degree Celsius water. Hot water is evacuated from the chiller and collected to the hot liquor tank for later use. What was once hot wort has now been chilled to the desired fermentation temperature.
Besides the necessary cooling to ensure we do not poach our yeast another miracle of brewing occurs at this time. The rapid chilling of the wort also precipitates what’s called cold break. This is basically the continuation of what we began in the wort boil as hot break. The cooler temperatures enhance the further precipitation of protein and protein- polyphenols. Lack of cold break can enhance ester production by the yeast as well as the formation of fusel alcohols. The presence of fusel alcohols are always a defect and are characterized by a solvent- like heat or alcohol taste in the finished beer. This is not to be confused with the alcohol taste from a strong beer. The key phrase “solvent- like” is critical to understanding and tasting this. A strong ester profile may or may not be a defect depending upon the style of beer being brewed. As the beer enters the fermenter the cold break settles and can be removed after primary fermentation. Some amount of cold break in the wort is considered important to enhance cell growth due to the presence of sterols, a vital element in the production of cell walls.
One last element to wort chilling is the injection of oxygen into the wort stream. Oxygen is important at only this step and its dissolution should be avoided at all other points in the brewing process. The yeast as it moves through its fermentation stages begins with aerobic fermentation. At this point the yeast metabolizes the O2. Oxygenation levels going to the fermenter may influence cell growth by providing fatty acids for sterol production which is as mentioned, important for cell wall growth. Ester and phenol formation are also greatly influenced by oxygenation levels.
There you have it dear readers, the final steps up to when the little fungi take over and render our wort to that most delicious of beverages. Beer… guaranteed to conquer any thirst and assure that for a brief moment, we are all bullet- proof.

With your paid general admission ticket you can taste up to 24 three ounce samples of micro-brewed and specialty craft beers and receive a souvenir sampling mug. There will be live music, plenty of food (on sale), games, contests, and give-aways! The festival gates run from 2 - 6 pm each day, with VIP entrance at 1pm. The Left Hand tent will be pouring Milk Stout Nitro and Sawtooth ESB, new to AZ on draft. Our Cask Conditioned Ale Festival for 2010 will be at the Winking Lizard Party Center in Bedford Hts. It will feature real ale selections from Left Hand, BrewDog, Sierra Nevada, Great Lakes, Clipper City, Troegs, Fat Head’s, Victory, Burton Bridge, Thirsty Dog, Founder’s and Avery. 10 Questions for a Sweet Brewer
It's been a few weeks since the last post, largely due to a busy work schedule. It's not like I stopped drinking beer, don't worry. I haven't had time in the last month to brew anything, but I've got some ideas kicking around. A few weeks back I had sent out some questions to Nick Funnell, the head brewer at Sweetwater Tavern. He was nice enough to get back to me. In case you haven't been there Sweetwater Tavern operates three locations in Northern Virginia: Merrifield, Centreville, and Sterling. It's one of the best restuarants near me in the Merrifield area, with a great food selection ranging from steak and fish to more casual offerings like sandwiches and salads (think Outback Steakhouse, but with good food and service). Also, the beer is made in-house and pretty darn good to boot. Nick has amassed some hardware from the Great American Brewfest over the years and it shows. Here goes:
Holz: First, can you give my readers an idea of how you got started in brewing? Were you originally a homebrewer?
Nick: I got started in brewing after getting a degree in Chemistry and finding an apprenticeship in a brewery. I have only ever homebrewed once, without distinction.
Holz: Did you attend any school to study brewing or did you start right out working at a brewery?
Nick: I studied brewing as part of my apprenticeship.
Holz: Sweetwater Tavern always has a nice selection of year round and seasonal offerings, how do you approach the creative process of crafting a new brew?
Nick: When we create a new beer we look for a gap in our portfolio that needs filling.
Holz: I believe Great American Restuarants (owner of Sweetwater Tavern) won two medals this year at the Great American Beer Fest, congratulations. Which beers won?
Nick: We won a Bronze medal in the Belgian Wit bier category for Wits’ End and a Gold in the Rye beer category for Crazy Jackass Ale.
Holz: Were you able to make it out to Denver this year for the festival?
Nick: I was lucky enough to be in Denver for the festival.
Holz: Occassionally, I see Great American beers available at the store, do you guys bottle your beers? Any plans to ramp up bottling production?
Nick: We do not bottle any beer for stores. We concentrate our efforts on getting people to come to us where we are able to fully guarantee the flavor and freshness of our beer. We do sell growlers of beer to go and they are filled on a counter pressure machine that ensures quality.
Holz: Which breweries and/or brewpubs inspire you?
Nick: Almost all breweries and brewpubs inspire me as there is something to be learned from each one.
Holz: Besides drinking the final product, what do you enjoy most about brewing?
Nick: The satisfaction of producing a great product that has developed a passionate following.
Holz: Which beer style do you enjoy brewing/drinking the most? The least?
Nick: All beers are equally satisfying to make as the process is essentially similar. As a brewer it is important to not favor one style over another when it comes to making the beer, or some will be better made than others. That wouldn’t be fair to the drinkers.
Holz: Is there any Sweetwater Tavern news (major or minor) that you want to share with my readers? New beers, locations, etc.?

I’m not making any promises, but I can vouch that pants have been lost during a St. Paddy’s Day party at Left Hand. We’ll have our Colorado wet-hopped Warrior IPA on tap. International Women’s Day
It’s not often enough that women get a special day, just for them, where they toast themselves and pay tribute to their sisterhood of drinkers. Left Hand is proud to host our female guests every day, but Monday, March 8th is a little extra special. In honor of International Women’s Day, Left Hand will be offering $1 off all pints, all day, for all the ladies joining us on the 8th. Cheers!
Imbiber of the Month
Every month we like to pay tribute to the guest that showed a little extra dedication to Left Hand during the previous month. Normally, this person makes a special presence in the Tasting Room by coming in everyday for a full month. This time it’s even more special for us. During the month of February, we had not 1, but 2 of our favorite guests join us in the Tasting Room every single day. Not rain, sleet, snow, or wind could stop the determination of Mr. Beasley and Mrs. Mama. They certainly proved their dedication and loyalty to Left Hand, and we love them for it. It’s a pleasure to have them in our family. Beasley and Mama will be easy to spot this month, just look for the mighty “King’s Cup.” They’ll be drinking out of this beautiful 25oz mug all month long.
Ales4FemAles
If you haven’t heard about the Ales4FemAles beer club for women by now, I don’t know where you’ve been. Left Hand hosts this group of ladies every month while they discuss beer, learn about beer, pair beer with food, and just have a good time among fellow female beer lovers. It’s been a crazy success and Cinzia and Sue are now hosting it twice a month as a result. In March, they’re meeting on Monday the 1st and Monday the 15th. Indian Peaks Alers
Are you thinkin’ about homebrewing? Are you an award winning homebrewer?
